Gillian de Souza's culinary journey began in Trinidad and Tobago, where she ran renowned fine dining vegetarian restaurants. After relocating to Maryland and working in the IT corporate sphere, her love for food drew her back. The persistent requests from her restaurant fans led to the inception of Caribbean Caterers in 2000. The business started modestly, focusing on intimate events in Gaithersburg, MD, and later expanded to its current North Bethesda location in 2004.
